Gluten Free Fig and Macadamia Nut Biscotti Cookies

The other day I found a wonderfully delicious Red Fig Jam and it got me thinking about using it in a cookie recipe. I turned to the biscotti cookie recipe in the Cooking Light Gluten-Free Baking cookbook since it worked well in the past and went to work modifying the recipe.  Instead of pistachios, I used macadamia nuts, added chopped dried figs and some red fig jam.


Let me just say, these are delicious, taste wise I couldn't ask for better flavours. Texture wise, I think I will need to do some more tweaking with the recipe. It's a little soft in the centre.  Perhaps I should have flattened the dough a little more prior to the first bake.  And maybe added more flour to the mix to compensate for the figs and jam?  I'm definitely going to work with these flavours again because there is nothing to complain about in that department. In the meantime, I'll be enjoying the biscotti with a cup of tea.

Happy Dance in the Kitchen


I made another batch of Gluten Free Peanut Butter Cup cookies. These cookies are courtesy of the recipe from The Baking Beauties.  But I didn't have any tapioca starch in the pantry.  Feeling daring, I added more potato starch to fill the void.  And it worked!  And that is when the happy dance in the kitchen commenced in the kitchen.  

Tapioca starch is used to help inflate, lighten and brown your baking.  I found that these cookies inflated nicely when they were in the oven and I think they have a nice colour to them.  I did bake them in the oven with the rack at the mid-range.  So thrilled they turned out.

Spiked Cookies

These are often referred to as Spiked Corn Cookies. In Portuguese they are called Espigas de Mihlo and they are delicious.  There are so many different versions of this recipe. This one found on the Food Network calls for wheat-based flour in the recipe. That is not how my Portuguese Mama makes these delicious cookies. It is all about white corn flour. It is not found in our local grocery store. Instead, we find white corn flour at the Portuguese or East Indian speciality markets. No wheat flour in these babies.

This is a hand made cookie press made especially for these cookies. It came from Portugal. Here in North America you can use a pastry bag with a star shaped attachment to make these cookies.  


They are perfect dunking cookies.

Chocolate Chip Macadamia Nut Cookies
