Summer-time!

My favourite time of the year is when yellow string beans start to appear at the farmer's market. Once upon a time, my folks grew these in the garden and my Mom learned this way of making them from one of her co-workers. It quickly became a family favourite.  


Yellow beans trimmed, cut, and boiled
Sweet onions, diced
Sea Salt
Freshly cracked black pepper
Olive oil
White vinegar

Toss and enjoy!

Light Lunch

Salad Niciose is a favourite light meal around here and it is gluten free.


Boiled eggs
Cherry tomatoes
Boiled potatoes
Green beans
Canned tuna
Sun dried olives


Dressing

Garlic
Shallots
Lemon juice
Olive oil
Oregano
Dijon mustard
Sea Salt
Freshly cracked black pepper

Chicken Lemon Pesto Soup (Recipe tweaked)

I can't get enough of this soup! I loved the taste of the Chicken Lemon sausage that I picked up at Marcello's Meats. At $12.50 for three sausages, it is a little rich for my budget (but it was oh so delicious!). I decided to take inspiration from Marcello's chicken lemon sausages and this is what I did. I made mini-chicken lemon meatballs. Our local grocery store sells ground chicken so I started there.  


Ground chicken
Gluten-free bread crumbs
Milk
Grated lemon zest
Lemon juice
Gluten-free Montreal Chicken spice blend
Gluten-free garlic spice blend
Thyme


Chicken Lemon mini-meatballs
Chicken broth
Carrots
Celery
Leeks
Garlic
Baby Spinach
Green Onions
Pesto
Sea Salt
Freshly cracked black pepper
White kidney beans
Parmesan cheese rinds

Happy Mother's Day!

Mama R's favourite salad is Salad Nicoise making this an easy decision for Mother's Day eats. And there is Crab Quiche in the oven too.  

Happy Mother's  Day to all!  
    

Boiled diced potatoes
Steamed green beans
Hard boiled eggs
Sliced cherry tomatoes
Canned Tuna
Sundried black olives
Bed of romaine lettuce

1/4 cup diced shallots
3/4 cup extra virgin olive oil
1/2 cup freshly squeezed lemon juice
2 tbsp freshly chopped basil
2 tsp freshly chopped oregano
1 tsp freshly chopped thyme
1 tsp dijon mustard

Yellow-eyed beans

There were no black-eyed peas to be found in the stores so I went for the next best thing this New Year's Day--Yellow-eyed beans.


I soaked them overnight and then brought them to a boil in a pot of salted water. When they reach the boiling point reduce heat to medium and cook for about an hour or until done.


Now what to do with them, curry? Soup? Baked beans?

I'm sure these beans would work in any of those ideas but I thought to add them to a tray of nachos.

Pumpkin Black Bean Chili

It is nippy outside and the weather report is calling for the chance of rain turning into snow flurries later today. I'm actually kind of excited to see the first snow fall. It really is a quietly beautiful sight.  And it makes for a perfect day for some chili!


Pumpkin Black Bean Chili

2 white onions, chopped
3 cloves of garlic, miniced
1 lb. lean ground beef
1 can of black beans, rinsed well
3/4 cup of beef broth
1 cup of pumpkin puree
1 cup of diced tomatoes
1 teaspoon of ground cinnamon
2 teaspoons of dried oregano
1 teaspoon of chili powder
2 tablespoons of honey

Saute onions and garlic with 1 tablespoon of olive oil. Add ground beef and cook until it starts to turn brown and season with cinnamon, oregano, chili powder.  Add black beans and tomatoes and mix. Add honey, beef broth, and pumpkin puree. When it comes to a boil, reduce heat and simmer for 20 minutes.

The end of the line...

I made another Salad Niciose today and sad that the green beans are coming to the end of the season.

There is no better taste than fresh from the garden produce. Not even the stuff you can get at the grocery store.

Even though the green beans from my family's garden will soon end, the tomatoes are on their way. Hopefully. If they ever ripen.

Mmmm, fresh from the garden tomatoes. I can't wait.

Eating Gluten-Free on a Budget

Eating a gluten-free diet is not the cheapest way to feed oneself. It can really be a shock to the pocketbook if you're not prepared for it and especially if you are starting out.

Here in Canada, if  you are celiac you can deduct a small portion of your gluten-free grocery items when it comes time to file your income tax. But not all of us qualify for tax deductions and even if we do, our grocery bills are significantly higher than those who do not eat a gluten-free diet.

Here are some tips that might help along the way.

Plan your meals.
Gail Vaz-Oxlade says it best, "do some meal planning [and] shop with a list." Gail is right. When you're shopping with a game plan in mind, your focused on what you need rather than those wants that can destroy a budget plan. Don't just scope out recipes to help out with the meal plan, consider the left-overs that you have or will have during the week. Making extra for dinner will help take the load off of planning for lunches too.

Cook at Home.
I feel silly saying this but if you are going out to eat, your budget will soon run out. Duh.

Don't let cooking at home be a chore, cooking is more fun when you have company in the kitchen. And cooking alone should never be done without some good tunes.  Remember, the best parties start in the kitchen. And everyday should be a party!

Grow Herbs.
So, you may not have a yard to grow a garden but herbs can be grown in containers. Just about anything you can think of!  And there is nothing to make a meal come together than fresh herbs!

Love the Legumes.
Oh my goodness, I love beans and chickpeas and lentils. Not only are they economical they make delicious dishes. Dried beans are cheaper than buying them canned and I find soaking them and then cooking them in the slow cooker works well.

One of my favourites is adding black beans to salsa with a handful of toasted cumin and lime juice and giving it a whirl in the food processor.

Shop Seasonally.
In season produce is not only cheaper it tastes better too!  Check out what is growing in the garden or available at the farmer's market.  I know at this time of year there are farmers markets popping up everywhere across the city.  It makes for a lovely Saturday morning outing too.

Be Creative.
Be creative with left-overs!  Left-over vegetable curry is delicious in an omelette.  And left-over mashed potatoes make a great crust for quiche.  You'll save a handful of cash by avoiding those pricey gluten-free pie crusts.

Stock your freezer.
I'm not talking about stocking your freezer with processed gluten-free foods. Stock your freezer with go-to items that  help to put meals together.

  • Instead of buying frozen waffles I make my own.  
  • And pancakes too!  My favourite are the zucchini pancakes and they freeze well.  I make them when zucchini is in season.  
  • I like making my own Red Pepper Tomato Sauce. I wait until red peppers are on sale and that is when I make a batch. It freezes well. 
  • Chicken Pot Pies also freeze well, I tend to double the recipe and stock up. They are great for brown-bagging it.  

Get to know your local businesses.
It seems like more and more stores are carrying gluten-free products. Check out your neighbourhood. Here we have a fantastic shop that bakes fresh bread, pastries, and carries a variety of flour mixes, and dry foods all gluten-free. Unlike the big chain stores they offer a 10% discount on purchases made mid-week. See what deals the smaller retailers have to offer, you might be surprised while supporting a local business.

These delicious mushrooms were made by my father, one of the greatest cooks I know, next to mom. They were delicious and I could have easily made this side dish my main course.

Nicoise Salad



Tomatoes, leftover roasted potato, hard boiled eggs, sun-dried black olives, fresh-from-the-garden string beans, fresh-from-the-garden lettuce and tuna.

Arrange on plate.  Drizzle with dressing.

Dressing:

1/2 cup of lemon juice
3/4 cup of olive oil
fresh thyme
fresh basil
freshly cracked black pepper
1 tsp. gluten free dijon mustard

Black Bean Salsa

Easy Peasy Black Bean Salsa

1 can of black beans (rinsed)
2 tbsp. cumin
juice of 3 limes
1 cup of salsa

Blend in the food processor.

Easy peasy.

White Bean Chicken Chilli


Peel and wash tomatillos, roast in 350 degree F oven for about 20 minutes. Remove from heat and let cool. Meanwhile... 


saute 2 large onions and 6 cloves of garlic in 1 tablespoon of olive oil until soft. Add 2 peppers (green and red). Add 2 tbsp cumin and oregano.


Using a potato masher, mash the tomatillos. Add to the stock pot with the onions and garlic.


Add white beans.


with 3 cups of chicken stock, 3 chopped tomatoes, 1 cup of corn, green chillies, and 1 lb. chicken thighs, cut into bite-sized pieces.


Added bonus, this freezes well!
