A Quick Trick...

I enjoy squeezed lime in my water. And I tend to purchase a big bag of limes when at Costco. It is cheaper than purchasing one or two at a time at the grocery store. But when I buy it in "bulk" it seems that I don't make it through the bag before they start to look not as fresh as when I purchased them.  

So here's the trick. I squeeze the juice out of half a lime and fill up a ice cube tray with it. It works out perfectly because I usually just squeeze 1/2 a lime into my glass each time.  

It not only saves money by not wasting any limes down the road it also saves time whenever I'm on the run.

Pachyrhizus erosus

The pachyrhizus erosus, also know as Jicama, has only been used as an ingredient in a salad, until today.

I discovered jicama fries, apparently a popular street-food treat in Mexico. Who knew? Certainly not me otherwise I would have been chowing down on these a long time ago!

These ones I made with chilli powder, lime juice, freshly cracked sea salt and black pepper. It is missing something. I'm going to have to tweak the recipe. Suggestions?

Zucchini Pancakes

I love this recipe because these pancakes freeze very well and they are delicious spread with Apple Lime Jam.

Finely shred 2 cups of zucchini,








add zucchini to 4 beaten eggs,


 To the egg and zucchini mixture add 3/4 cups of gluten free all-purpose flour.  I really like Cloud 9 Baking Mix.

Along with 1/2 tsp. salt, 1/2 tsp. sugar, 3 tbsp. olive oil mix well and add 4 tsp. gluten free baking powder.

Using an ice cream scoop add pancake batter to a lightly greased skillet.

Cook until the edges start to bubble, turn and cook the other side until lightly browned.

To freeze store them in between layers of wax or parchment paper.

Black Bean Salsa

Easy Peasy Black Bean Salsa

1 can of black beans (rinsed)
2 tbsp. cumin
juice of 3 limes
1 cup of salsa

Blend in the food processor.

Easy peasy.

Home-made Salsa





























Salsa is easy to make, just take a look at what is available in the garden. Well, in this case I raided my parents' garden. I made this batch mild for my Mom and she loves it. Dad thinks it needs more black pepper. Mom's grand-sons think it needs more salt and garlic. Everyone is a critic. 

Cherry tomatoes, seeds removed and chopped by hand
White onions, diced
Yellow and Red peppers, diced
Garlic, minced
Zest of 2 limes
Juice of 2 limes
Cumin, toasted and then a toss in the grinder
Freshly cracked Sea Salt
Freshly cracked Black Pepper.
