What to Do With Left-over Scallop Potatoes...

I love cooking with left-overs and re-creating a new dish. There recently was some left-over scallop potatoes and stuffing used for a stuffed pork dish. Perfect combination!  

Layer left-over scallop potatoes in a greased baking dish.  

Add a layer of left-over stuffed pork stuffing.  Add another layer of left-over scallop potatoes.  Pour 3 beaten eggs that have been seasoned with salt and oregano.  


Bake in a 350° F oven for 45 minutes.

Portuguese Cod Fish Dish

This is another favourite dish around here--a traditional Portuguese and gluten-free dish! Cod fish, potatoes and other goodness...


Layer par-boiled sliced potatoes, thinly sliced onions, thinly sliced roma tomatoes, cod fish and hot pepper paste oil (homemade pepper paste, garlic and seasonings). Repeat and Bake in a 350˚F oven.  

If you are not lucky enough to be born into a Portuguese family or have Portuguese friends willing to share their own homemade pepper paste, you can find this essential ingredient at your local Portuguese market.

Green beans
Canned tuna
Sun dried olives


Dressing

Garlic
Shallots
Lemon juice
Olive oil
Oregano
Dijon mustard
Sea Salt
Freshly cracked black pepper

Untraditional, Yes!

This weekend we're celebrating Thanksgiving and I'm thankful that there is no turkey on the menu. Oh and I'm thankful for my family too.   


On the menu there was stuffed pork loin, mushroom gravy, roasted red and sweet potatoes with red onions and rosemary, green peas, caesar salad and gluten-free pumpkin pie from Lorenzo's. At Lorenzo's I was able to find gluten-free pumpernickel bread for the stuffing. They ran out by the time I got there but there was a mini-loaf that they let me have that worked out to be the perfect amount. Thank you!  


While the food was in the oven, there was time to set the table.


No croutons left over for the salad, de-lish non-the-less.

So thankful for so much.

Borscht

Gotta love autumn for all the food gifts that find its way to the table. These are organic beets that someone found in their organic food delivery box but didn't know that to do with them.  


I thought I would give a try at making borscht.  I used a recipe that I found in Classic Home Cooking by Mary Berry and Marlena Spieler.  


Red cabbage
Beets
Carrots
Red onions
Tomatoes
Red potatoes
Chicken stock
Dried dill
Dried Celery
Red wine vinegar
Organic coconut cane sugar
Sea salt
Black pepper

I know it is a popular soup but I think it needs something.  I added back bacon and that helped. I think it could use more seasoning, cumin perhaps? I do like cumin.

Vegetable or Chicken stock 
Cayenne Pepper

Freshly cracked black pepper
Milk
Gluten-free all-purpose flour

Crab meat

Portuguese Lasagna

Okay, it is really not called Portuguese Lasagna. Just a little joke there. But it is delicious and that is no joke!  

Start with some sliced potatoes, par-boil them and layer the bottom of a baking sheet.  


You'll also need some cooked salt cod that has been broken into pieces.  


Some thinly sliced onions and shallots.  


Layer and top with diced tomatoes.  Drizzle with olive oil that has been dressed with homemade hot pepper paste, thyme, salt, pepper and garlic. Bake for 45 minutes in a pre-heated over (375 degrees).

1/4 cup diced shallots
3/4 cup extra virgin olive oil
1/2 cup freshly squeezed lemon juice
2 tbsp freshly chopped basil
2 tsp freshly chopped oregano
1 tsp freshly chopped thyme
1 tsp dijon mustard

Spaghetti Squash Latkes


Minced Shallots
Minced Ginger
Cooked Spaghetti Squash
Grated Potato
Ground Cumin
Freshly Cracked Sea Salt
Freshly Cracked Black Pepper

Gluten Free Flour
Grapeseed Oil

Serve warm with honey flavoured Greek yogurt!

Gluten Free and It Freezes Well Too!



This dish is a way that I can eat lamb without making a roast or have left-overs to deal with. This my friends is Irish Stew ready for the slow cooker. It freezes well too so I'm able to put it into individual containers and freeze for a later time. Perfect for those chilly winter evenings. Just make sure you use a gluten-free beef broth and coat your lamb pieces with a gluten-free all-purpose flour blend first.

Serve it up with some hot-out-of-the-oven gluten-free cornbread.

Happy Thanksgiving!

It is the Canadian Thanksgiving weekend here. It is a beautiful day, the sun is shining and I'm blessed with family and friends. Today, I'm making dinner for the folks. I am thankful that they are in my life and to spend this beautiful day with them.

Sweet potatoes, red potatoes, shallots, white onions, red onions, avacado oil, rosemary, salt and pepper.  

Cornish Game Hens stuffed with lemon, garlic and rosemary.  Seasoned with salt and pepper and rubbed with butter.  

Plantains fried in avocado oil and seasoned with sea salt. 

Gravy with artichoke hearts. 

Sweet and Sour Cabbage from Bistro Dansk.

Farmer's Market

It really is not surprising that the folk's backyard garden did not do as well as in the past. The last two years have been extremely dry and this ended up being the summer to recover.



Thankfully, there is a great farmer's market to fill in for the items that are missing from this year's yield, potatoes, peppers, etc.  Check out the size of those broad beans.  I've never seen broad beans this big, have you?

The end of the line...

I made another Salad Niciose today and sad that the green beans are coming to the end of the season.

There is no better taste than fresh from the garden produce. Not even the stuff you can get at the grocery store.

Even though the green beans from my family's garden will soon end, the tomatoes are on their way. Hopefully. If they ever ripen.

Mmmm, fresh from the garden tomatoes. I can't wait.

Eating Gluten-Free on a Budget

Eating a gluten-free diet is not the cheapest way to feed oneself. It can really be a shock to the pocketbook if you're not prepared for it and especially if you are starting out.

Here in Canada, if  you are celiac you can deduct a small portion of your gluten-free grocery items when it comes time to file your income tax. But not all of us qualify for tax deductions and even if we do, our grocery bills are significantly higher than those who do not eat a gluten-free diet.

Here are some tips that might help along the way.

Plan your meals.
Gail Vaz-Oxlade says it best, "do some meal planning [and] shop with a list." Gail is right. When you're shopping with a game plan in mind, your focused on what you need rather than those wants that can destroy a budget plan. Don't just scope out recipes to help out with the meal plan, consider the left-overs that you have or will have during the week. Making extra for dinner will help take the load off of planning for lunches too.

Cook at Home.
I feel silly saying this but if you are going out to eat, your budget will soon run out. Duh.

Don't let cooking at home be a chore, cooking is more fun when you have company in the kitchen. And cooking alone should never be done without some good tunes.  Remember, the best parties start in the kitchen. And everyday should be a party!

Grow Herbs.
So, you may not have a yard to grow a garden but herbs can be grown in containers. Just about anything you can think of!  And there is nothing to make a meal come together than fresh herbs!

Love the Legumes.
Oh my goodness, I love beans and chickpeas and lentils. Not only are they economical they make delicious dishes. Dried beans are cheaper than buying them canned and I find soaking them and then cooking them in the slow cooker works well.

One of my favourites is adding black beans to salsa with a handful of toasted cumin and lime juice and giving it a whirl in the food processor.

Shop Seasonally.
In season produce is not only cheaper it tastes better too!  Check out what is growing in the garden or available at the farmer's market.  I know at this time of year there are farmers markets popping up everywhere across the city.  It makes for a lovely Saturday morning outing too.

Be Creative.
Be creative with left-overs!  Left-over vegetable curry is delicious in an omelette.  And left-over mashed potatoes make a great crust for quiche.  You'll save a handful of cash by avoiding those pricey gluten-free pie crusts.

Stock your freezer.
I'm not talking about stocking your freezer with processed gluten-free foods. Stock your freezer with go-to items that  help to put meals together.

  • Instead of buying frozen waffles I make my own.  
  • And pancakes too!  My favourite are the zucchini pancakes and they freeze well.  I make them when zucchini is in season.  
  • I like making my own Red Pepper Tomato Sauce. I wait until red peppers are on sale and that is when I make a batch. It freezes well. 
  • Chicken Pot Pies also freeze well, I tend to double the recipe and stock up. They are great for brown-bagging it.  

Get to know your local businesses.
It seems like more and more stores are carrying gluten-free products. Check out your neighbourhood. Here we have a fantastic shop that bakes fresh bread, pastries, and carries a variety of flour mixes, and dry foods all gluten-free. Unlike the big chain stores they offer a 10% discount on purchases made mid-week. See what deals the smaller retailers have to offer, you might be surprised while supporting a local business.

Nicoise Salad



Tomatoes, leftover roasted potato, hard boiled eggs, sun-dried black olives, fresh-from-the-garden string beans, fresh-from-the-garden lettuce and tuna.

Arrange on plate.  Drizzle with dressing.

Dressing:

1/2 cup of lemon juice
3/4 cup of olive oil
fresh thyme
fresh basil
freshly cracked black pepper
1 tsp. gluten free dijon mustard

Sliced Potatoes layered with roughly shredded Salt Cod, sliced Onions, diced Tomatoes, and drizzled with olive oil with Pira-pira sauce.

Bake in 350 degree over until potatoes are done.

Christmas Left-overs

What to do with left-overs? You can re-heat and eat but that just gets boring after a couple of repeats. I came home with left-over broccoli and mash potatoes after no one stepped up.

The other day I made Broccoli, Bacon and Cheddar Quiche with a Mash Potato Crust. There are tons of recipes out there on the world wide web for different versions of mash potato crusted quiche. Here is my version:

I just brushed the pan with olive oil, filled with mash potatoes, brushed with more olive oil and baked in the oven until it started to brown.


Then I added a layer of bacon, broccoli, 6 eggs seasoned and a splash of milk before adding on top of the crust. Then I topped with cheddar cheese before baking for 30 minutes.

Mighty. Fine. Quiche. And gluten-free too!
