Bye-bye Mayo!

I picked up a copy of Ana Patuleia Ortins' latest cookbook Authentic Portuguese Cooking the other day and there are so many recipes in this book that I want to try. This evening for dinner I made Salada de Atum à Moda da Graciosa (Tuna Salad Graciosa Style). If you have the cookbook, the recipe is found on page 204.  


Oh my goodness, it is delicious! I'm never mixing mayo with tuna again.

Gluten-free Tabbouleh Salad


2 cups of cooked quinoa
1/4 cup finely diced shallots
1 yellow pepper
3 cucumbers
12 cherry tomatoes
1/4 cup extra virgin olive oil
juice of 1 lemon
Sea Salt
Freshly cracked black pepper

Wild Mushroom and Garlic Pasta

Super easy dish when your short on time.   


6 cups of assorted mushrooms
2 tablespoons of butter
12 cloves of garlic
4 more tablespoons of butter plus 2 tablespoons of olive oil
2 teaspoons dried basil
gluten-free spaghetti 

Top with Parmesan cheese and enjoy!

Stuffed Pork Loin

Oh my goodness, this is one de-lish dish!  


To make the stuffing cook one diced onion with about a tablespoon of olive oil. When the onions begin to soften, add about 10 ounces of homemade Portuguese chorizo. Brown chorizo and remove from heat and let it cool.  Add cheese and parsley.  


Remove fat from a pork loin and slice open so that it can be stuffed and rolled jelly-roll style.  Layer the stuffing and roll tying with butcher's string.  


Mix olive oil, salt, parsley, paprika and chilli powder and rub the pork loin.  


Roast in a 350° F oven until the internal temperature reaches 150° F.  Enjoy!  Left-overs are delicious when thinly sliced for sandwiches.

Diced red potatoes
Vegetable or Chicken stock 
Cayenne Pepper
Gluten-free Creole Spice
Sea Salt
Freshly cracked black pepper
Milk
Gluten-free all-purpose flour
Corn
Crab meat
Green onions

A New Gluten-free Pasta

New Product:    Tolerant Brand Organic Red Lentil  Pasta

I found this pasta at Costco last week. The ingredient list: red lentils. That's it. I wasn't sure how it would cook and taste but I was willing to give it a try.

I have to tell you that I like it!!!  It cooks without breaking apart and it came out el dente. And it tastes good too. I should mention that I do like red lentils before I even tried this product.

Price wise, it is expensive compared to the regular wheat based pasta. It is comparable to other organic gluten free pasta products.   




Gluten-free red lentil pasta
Tuna
Lemon juice
Lemon zest
Capers
Olive Oil
Sea Salt
Freshly cracked black pepper

Summer Fresh Pasta


Gluten-free pasta
1/2 cup sundried olives, pitted
1 1/2 cup of cherry tomatoes
1/2 cup feta cheese
1/4 cup olive oil
2 tablespoons of freshly squeezed lemon
2 tablespoons of freshly chopped orange mint
Sea salt
Freshly cracked black pepper

While cooking pasta mix the remaining ingredients. Toss with cooked pasta. Serve hot or at room temperature. Enjoy!

Mama R's favourite salad is Salad Nicoise making this an easy decision for Mother's Day eats. And there is Crab Quiche in the oven too.

Boiled diced potatoes
Steamed green beans
Hard boiled eggs
Sliced cherry tomatoes
Canned Tuna
Sundried black olives
Bed of romaine lettuce

1/4 cup diced shallots
3/4 cup extra virgin olive oil
1/2 cup freshly squeezed lemon juice
2 tbsp freshly chopped basil
2 tsp freshly chopped oregano
1 tsp freshly chopped thyme
1 tsp dijon mustard

Spinach, Mushroom and Beef Stir-fry


Onions
Mushrooms
Freshly minced ginger
Olive Oil
Thinly sliced beef
Spinach
Sea Salt
Freshly cracked black pepper
Gluten-free Soya Sauce

Serve with sprouted brown rice.

Nicoise Salad



Tomatoes, leftover roasted potato, hard boiled eggs, sun-dried black olives, fresh-from-the-garden string beans, fresh-from-the-garden lettuce and tuna.

Arrange on plate.  Drizzle with dressing.

Dressing:

1/2 cup of lemon juice
3/4 cup of olive oil
fresh thyme
fresh basil
freshly cracked black pepper
1 tsp. gluten free dijon mustard
